- Add prominent gotcha: USE NAMED VOLUMES, not bind mounts
  macOS Docker Desktop has gRPC-FUSE UID remapping that breaks
  chown calls inside containers. Bind mount chown permissions
  cannot be resolved cleanly. Named volumes work identically
  on macOS and Linux without any permission workarounds.
